Breakfast Help!!

We are so excited this weekend to have a guest room and basement - we get to have some of the BYU Lacrosse team stay with us for a tournament. Living in Maryland you always seem to have someone in your ward who plays on the team, so we get to have my friends son stay with us!

Anyway here comes my cry for help. I have to have them to the field by 6:00 am, which means I have to give them a wonderful breakfast by 5:00 am!
Anyone have a great breakfast casserole dish I can make the night before???

You should make these breakfast muffins! You make them with Bisquick. So easy!

The recipe calls for ham and broccoli, but I substitute (cooked) ground sausage or bacon and cheese. I made them for my family, and they loved them! Best of all, they reheat really well.

If the link doesn't work, just google, "ham and broccoli muffins + southern living"

Good luck! :)

Wilson's Breakfast Casserole

1 lb Sausage

2 Cups Colby Jack Cheese

1 can crescent rolls

1 ½ cups frozen Hash Browns (thawed)

4 Eggs Beaten

½ cu Milk

¼ tsp Salt

1/8 tsp Pepper

Preheat oven to 425

Line bottom of greased 13” x 9” baking dish with crescent roll dough. Bake 6-7 minutes before adding other ingredients.

Sprinkle with sausage, cheese, and hash browns.

Combine eggs, milk, salt & pepper in bowl until blended. Pour over sausage.

Bake 25-30 minutes until cheese is melted and begins to crust. Cover loosely with foil and bake 10-15 more minutes (or until sets).

Let stand 5 minutes before cutting into squares.

Here is one you can mix up the night before, wrap up and just pop in the oven in the morning. It's always hearty and filling. Serve with a little bit of fresh fruit and it's a great start to the day.

Dozen Eggs
2 C Shredded Velveeta
1 Can Crescent rolls
1 Pound Breakfast Sausage
Salt & Pepper to taste.

-Crumble and brown sausage in a skillet, drain grease set aside.
-Line a 9x13 casserole dish with crescent roll dough.
-Spread cooked sausage over dough.
-Beat eggs and pour over top of meat & dough.
-Sprinkle shredded cheese on top.
-Cover with foil and bake in 350 degree oven for 30-35 minutes.

this will serve 6-8 but you'll have hungry boys, so you may need extra servings.

They're lucky to be staying at Chez Cutler! I don't have any breakfast ideas for you, because I'm all about cereal and Carnation Instant Breakfast. Good luck!

I found a recipe on The Sisters Cafe blog for oatmeal pancakes – you mix up the base and store it, and add in the liquids when you're making them. Might be faster than your usual?

How fun to have room to host!

I love this recipe . . . you can make it the night before then just throw it in the oven that morning.

Holiday Breakfast--serves 10-12

3 TBS Vegetable Oil

2 LBS Frozen Hash Browns, thawed

1 onion, chopped

1 green pepper, chopped

1 cup cubed, cooked ham

1 dozen eggs, well beaten

Salt and Pepper to taste

1 cup shredded cheddar cheese

Heat oil; add onions and green peppers and brown. Add hashbrowns and cook until they start to brown. Pour into a greased 9 X 13 pan. Spread ham out on top. Pour eggs over ham. Top with cheese. Refrigerate overnight. In the morning, bake uncovered for 35-45 minutes @ 375 degrees. Make sure the top is browned, and that the eggs have set, especially in the middle. Tastes great with salsa or ketchup.

You can make breakfast burritos the day before- tortillas, scrambled eggs, sausage, cheese, green chili, etc. Wrap them up and put them seam side down on a cookie sheet and in the fridge. In the morning, just pop them in the oven at 400 for about 20 minutes. It's easy and something they can grab and eat on the go without having to sit down to eat. You can even wrap them individually in tinfoil if you want and heat them that way on the cookie sheet. That would make grabbing one simple...and no plate needed! I'd probably do that and have some cold individual serving bottles of juice. Good luck!
